Fidencio Alatriste

Executive Chef

Alatriste was born in Huauchinango Puebla, Mexico.

​

After working in a few kitchens to get his feet wet, he began his first formal position as cook at Chef Matt Carter's lauded Zinc Bistro.

 

He remained there so several years, before following Carter to his new restaurant at the time The Mission Modern Latin Cuisine in Old Town Scottsdale. Alatriste brought all his skills and flavors that he grew up with in Puebla.

 

From there he did a brief stint as a Kitchen Leader for Les and Diane Corieri's EEG (Evening Entertainment Group) until he was recruited by Mission Restaurant alumni, Chef James Fox to be his right handle man in the opening of the restaurant Milagro Grill (Mexican fine food.)

 

Unfortunately Fox's restaurant could not sustain due to high rents, and Fox brought Alatriste with him to be his Sous Chef for at Rick Phillips' award-winning Bootleggers Modern Smokehouse. 

 

The attention he received there motivated Joey Maggiore  (The Sicilian Butcher, Maggiore's, Hash Kitchen, The Rosticceria) to ask Alatriste to consult for him in an effort to elevate his seafood  restaurant at the time, Cuttlefish.

From there, under the mentorship of famous chef Richard Sandoval, Alatriste took over the kitchen at Toro Latin Restaurant at the Fairmont Scottsdale Princess.

 

Over his 6 yrs there, Alatriste was able to create different Latin menus, making the restaurant a success.

 

This attention caused a friend from the past to come calling again when Joey Maggiore asked Alatriste to create a Mexican menu for his pilot concept Mexicano located in Florida.

 

Upon returning, Maggiore offered Alatriste the role of Corporate Executive Chef and to work with him to launch The Mexicano back  in Scottsdale.

 

The success of Alatriste's food even garnered accolades from the Consulate of Mexico, who praised  him for his great career and his fight to maintain the flavors and traditions Mexico.

 

Alatriste has appeared enjoyed attention from both local  and international magazines and television, who have considered him one of the leading Latino Chefs in Arizona.
